This recipe is kind of like a spicy marinara sauce. It's very light.
Ingredients
2 cans tomato puree
2 cans diced tomatoes
1/2 cup chopped onion
1/2 cup diced green pepper
1 can dark red kidney beans
4 cloves of garlic - roasted and diced
2 T chili pepper
2 tsp Tabasco
2 tsp cayenne pepper
1 tsp white pepper
1/2 cup beer
Served over...
2 cups cooked hot rice (white or brown or whatever you prefer)
The Preparation
- Combine the diced tomatoes, green pepper, onion and garlic in a large pot. Cover and let simmer until onions are transparent and the green pepper has softened.
- Add the tomato puree. Mix ingredients well. Add the Tabasco, white pepper, chili powder and cayenne pepper.
- Cover and let the sauce simmer for half an hour. Stir occasionally. Next, slowly stir in the beer.
- Cover and let simmer for another half hour. Stir occasionally.
- Fifteen minutes before serving, add the kidney beans.
- Serve over the rice.
