This is pretty good banana bread. It's even good green... (my fiance likes to add food coloring when he cooks...)

Ingredients
4 ripe bananas (large)
2 eggs
1/2 cup butter
2 T sour cream
1 tsp lemon juice
1 cup sugar
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup maple syrup (be sure to use real maple syrup)
1 cup chopped walnuts or pecans (optional)
The Preparation
- Mash the bananas until they form a creamy mixture.
- Blend the eggs, butter, sour cream, lemon juice and sugar with the mashed bananas.
- In a separate bowl, combine the flour, baking powder and baking soda.
- Pour the banana mixture into the flour mixture and stir until all ingredients are well combined.
- Pour into a greased loaf pan (9 x 4 inch) and bake at 350 degrees for 55 minutes. The bread will be done if a toothpick comes out clean (after being inserted into the bread...)
- Cool for 5 minutes and then remove from pan.
